Bringing traditional bread back to Central Alentejo

Description

Pão da São (São's Bread in English) is a Portuguese bakery that produces naturally fermented bread that doesn't use any kind of chemical leavening agent.

This campaign aims to advance funds approved by the European Regional Development Fund to modernize and expand the promotor's manufacturing unit. The investment will support facility upgrades, new equipment, and advanced management software to increase production capacity.

By investing in the expansion and modernization of their operations, the Pão da São bakery will reenforce their contribution to recovering a local product with a strong regional identity in Alentejo.  

The Impact

End all forms of discrimination against all women: The bakery sector is an area of economic activity where women remain significantly underrepresented, as highlighted in several reports. This company not only demonstrates that women can thrive in the industry but also ensures their presence at all levels of decision-making.

Sustainable and efficient production methods: The production method combines traditional techniques with modern technology. Bread is made using sustainable practices, with a focus on sourdough fermentation, which requires just three natural ingredients: water, flour, and salt. No chemical additives or preservatives are used at any stage. Ingredients are sourced from local farmers, supporting the regional economy and minimizing the environmental impact of distribution. Additionally, the use of digital tools throughout the production process allows for precise monitoring and significantly reduces waste.

Promotion  of fair work opportunities for all: The bakery "Pão da São" will hire new employees, offering specialised training in sourdough bread production techniques, ensuring knowledge transfer and the preservation of traditional practices. This is complemented by a commitment to ensure equal opportunities for community members, while addressing the need to maintain gender balance in access to employment opportunities. 

Promotion of inclusive and sustainable economy: Purchasing ingredients from local producers and selling it to local clients, encourages small-scale farming, sustainable production and consumption, creating a value chain that benefits the entire community.

Financial viability

The funds raised through this campaign will be paid back to investors using a 16.160,54€ grant from the Alentejo 2030 program. 

In 2024, and after the first half of the year, the promotor's average daily production grew to 75 loaves a day, which corresponds to a turnover of 16,600.00€ in 89 working days.

Guarantees

The loans granted to the promoter FAUSTINO & LARANJEIRO, LDA by the investors will be guaranteed as follows in the loan agreements associated with the campaign:

  • Personal guarantee ("letra com aval"), under Portuguese law, from the quota-holder, Ana Margarida Faustino Dias Ferreira with the following NIF 226774163, for the total amount of the debt.
  • Personal guarantee ("letra com aval"), under Portuguese law, from the quota-holder, Mariana Laranjeiro de Sousa with the following NIF number 221350624, for the total amount of the debt.


The Promoter

About Faustino e Laranjeiro, Lda

The Pão da São bakery was born in 2019 in the district of Évora, by the hand of two entrepreneurs. The project was incubated at Minga, a local co-operative. Minga's relevance in the region allowed it to reach a large community and validate the market niche for a natural fermentation bakery.

The project's legal entity - Faustino & Laranjeiro, LDA - was registered in 2021, allowing both business partners to dedicate themselves exclusively to building a natural fermentation bakery in the village of Vimieiro. In this way, the Pão da São bakery became the first natural fermentation bakery in the Évora district.

Faustino & Laranjeiro, LDA has grown sustainably and is recognised for its commitment to natural fermentation, high-quality ingredients and responsible production practices. Its work is reflected in invitations to debates in the sector, namely the debate ‘Traditional Bread, what advantages does it have?’, organised by AHRESP. The bakery was also present at the launch of the National Bread Platform, which aims to define the standards of Portuguese bread, certify traditional bread and promote the qualification of bakers and food professionals.

Over time, the company has expanded its presence, favouring local sourcing, responsible consumption and collaborations with regional producers, reinforcing the role of traditional bread as the cultural and economic engine of Central Alentejo.

Mariana Laranjeiro

With 28 years of professional experience, she has a degree in Hotel Management and a specialisation in Human Resources Management. She has worked in creative problem solving, conflict management and entrepreneurship. Always linked to management, she has worked in ERP software, human resources and business support areas. For 15 years, she promoted the development of the Opensoft SA team. In 2019, she decided to pursue her own project, moving to Central Alentejo where she worked on environmental regeneration projects, co-operative contexts (Cooperativa Minga) and co-founded the first natural fermentation bakery in the Évora district. She is currently managing partner of this bakery, where she is responsible for finance, human resources, partnerships and HACCP.

Ana Faustino

Has a degree (pre-bologna) in Environmental Engineering, specialising in water and waste, and more than 15 years' experience. She has worked on the three vectors of sustainability, including sustainable consumption and the Millennium Development Goals, now known as the Sustainable Development Goals. She studies and develops work on the subject of short food circuits, which led her to move to the Central Alentejo where for two years she developed the process of liaising with local producers at the Integral Minga Cooperative. She has also collaborated with the SMEA project - Semear em Montemor Estratégia Alimentar. She is a partner in the Pão da São bakery and is responsible for production, research and commercialisation.

Business Model

Production takes place in a rented space in the centre of Vimieiro. The premises are equipped with 2 electric ovens with stone hearths, with capacity for 25 loaves (8700g bread), 2 positive cold cabinets with a total capacity of 400l and a kneading machine with capacity for 16kg of dough.

The product catalogue currently includes the following products:

  • Everyday breads: available all year round, such as mix bread, wholemeal bread, rye bread, bread with seeds, cacete;
  • Seasonal breads: breads made with local products, only available in the season when the raw materials are available, such as bread with mogango and almonds, bread with walnuts and sweet potatoes, or bread with crackling;
  • Bakery products for occasional consumption: available all year round, such as toast with olive oil and oregano, and plain toast;
  • Seasonal bakery products: available at specific times of the year, such as bolo finto, boleima or bolo rei.

They operate a B2C and B2B business model, having established partnerships with hotels and catering units. More specifically, they have the following sales channels:

  • Direct sales by order: Available to the end consumer by order, with pick-up at the Vimieiro production point or delivery on specific days per location (Estremoz, Vimieiro, Évora, Barrancão, MoN, Arraiolos, Redondo);
  • Wholesale: Available in partnership with shops, restaurants and hotels in different geographies. You can find Pão da São products in places such as the Cooperativa Minga shop, the Dom Gosto pastry shop in Évora, the Os 3 Marmelos restaurant, also in Évora, the Cucumbi local accommodation, among others.
