Description

100 Maneiras is a group of three restaurants in Lisbon - Restaurante 100 Maneiras (with a Michelin star), Bistro 100 Maneiras and Carnal Gastrobar.

The funds raised through this campaign will be used to finance the company's cash-flow and day-to-day operations. The group's aim is simple: to offer unique gastronomic experiences across its three restaurants, through the events it organizes in diverse locations, and in every context - always measuring its impact on the world.

The 100 Maneiras Group's approach to sustainability is not limited to a one-off policy or strategy. Rather, it is a philosophy that dictates its operations. From choosing products to supporting local producers who respect the environment, they work to ensure that their customers can enjoy a gastronomic experience full of flavor, knowing that each element that makes it up has a story that respects nature and social responsibility.

  • Promoting fair work opportunities and a safe work environment: the 100 Maneiras Group employs 82 people across its three restaurants and prioritizes the continuous development of the team through regular training programs that range from culinary techniques to sustainability practices. 100 Maneiras also actively supports the integration of foreign workers and refugees, with initial training, mentoring for cultural and professional adaptation, and administrative support to achieve long-term stability and integration. 

Indirect

  • Consuming organic and responsible production: the three restaurants of the 100 Maneiras Group use products from suppliers that produce organically and/or responsibly. The four main suppliers are Horta da Garça, which supplies organic and seasonal salads and vegetables from the Lisbon region, Talho Cabecinha and Talho das Manas, which supply meat produced using responsible methods, and Ocean tour, which supplies fish from artisanal fishing with small boats.
  • Promoting the efficient use and sustainable management of resources: the restaurants embrace sustainable practices by implementing efficient waste management systems, composting, and recycling initiatives. They prioritize the use of reusable or recyclable materials, eliminate single-use plastics, adopt highly energy-efficient equipment, and actively work to reduce water consumption.

Financial viability

The company seeks financing to pay off loans from Caixa Geral de Depósitos, S.A. and Banco Comercial Português, S.A.. The loans mature on 25/05/2026 and 12/05/2026, respectively, with a total outstanding debt of 501.868,50 euros as of 30 November 2024. This refinancing initiative will enable the company to reduce its financial costs, optimize its debt structure, and improve overall cash flow management. This will enhance the company's financial stability, allowing it to focus on further developing its restaurant operations and maintaining its high-quality service standards. The anticipated revenues generated from the steady operations of 100 Maneiras Restaurante and 100 Maneiras Bistró, both of which have a strong customer base and a proven track record, will ensure the project's financial viability and facilitate timely repayment of the financing.

Guarantees

Loans granted to the promoter LOW COST FOOD CONCEPTS, RESTAURANTES, LDA by investors will have the following guarantees, provided for in the loan agreements associated with the campaign:

  • Personal guarantee, under Portuguese law, from the quota-holder, Nélson Filipe Gomes Rodrigues dos Santos with the following NIF 204205085, for the total amount of the debt.
  • Personal guarantee, under Portuguese law, from the quota-holder, Ljubomir Stanisic with the following NIF 226771210, for the total amount of the debt.
  • Personal guarantee, under Portuguese law, from the quota-holder, Nuno Filipe Fernandes Faria with the following NIF 211131105, for the total amount of the debt.


The Promoter

About Low Cost Food Concepts, Restaurantes, Lda.

Low Cost Food is the company behind the 100 Maneiras group, imagined by Ljubomir Stanisic. You can't dissociate 100 Maneiras from Ljubomir - or vice versa. The chef was born first, in 1978, and to talk about 100 Maneiras is to talk about the ‘most-Portuguese-Yugoslavian-cook-ever’.

The brand's name is intended to provoke, stimulate, and make you think. 100 Maneiras would translate to "without manners"  It refers to the absence of rules, but also to the infinitude of forms. The group seeks to reject preconceived norms and does not accept prejudice: ‘There are no limits to creativity. There are no barriers. There are no boundaries. There is tradition and there is innovation, knowledge and imagination, seriousness and play. There's just no monotony.’

100 Maneiras was born in Lisbon, in January of 2009. This restaurant on Rua do Teixeira was the first in the capital to serve a tasting menu at a more democratic price. A year later, downtown, Bistro 100 Maneiras opened. A historic, Art Deco-inspired space on the site of one of the oldest restaurants in the country where art and gastronomy, music, and cocktails coexist. Among various awards, the Bistro was considered world number one at the Monocle Restaurant Awards in 2017.

In February 2019, 10 years after opening, the new 100 Maneiras opened, two doors up from the first. Just nine months after opening, it was recognized by joining the 50 Best Discovery list, compiled by The World's 50 Best Organization, and became the winner of a Michelin star the following year.

In November 2021, the group expanded with Carnal Restaurant (not that it's not part of the promoting company). This gastrobar (honored by the Michelin Guide with a Bib Gourmand) offers Mexican cuisine, tequila and mezcal cocktails, and art by Carlito Dalceggio, under a clear motto: ‘Libre’. With great flavour.

100 Maneiras presents itself not ‘just’ as a restaurant, but as a family that follows the motto ‘It's the world that emulsifies, that moves us. And it's the emotion that we want to put in the glass, on the stone, in the pot or on the plate.’

Born in Sarajevo, Ljubomir Stanisic arrived in Portugal in 1997. The most-Portuguese-Yugoslav-ever chef is the chef-patron of three restaurants in Lisbon, author of five books, and a television star.

Nuno Faria

Nuno Faria was born in 1980 in Funchal, Madeira. He has been a partner and F&B (food and beverage) director at 100 Maneiras since May 2010 and is one of the best-known faces to those who visit Bistro 100 Maneiras. He is also responsible for the group's wine and produces Companhia dos Vinhos dos Profetas and Villões wines.

Nelson Santos

He was born in Lisbon, Portugal, in September 1972. As a child, he dreamed of being an aviator. Life took him on other flights, to the centre of the city, where he has been managing partner of 100 Maneiras since January 2009.

As a child, he was fascinated by the Ocean and dreamed of a career in biology. But it was fire, which his grandfather used to cook with and which he learned to tame in the Scouts, that drew him to the kitchen. Since May 2017, he has been head chef in the 100 Maneiras team.
